The Best Cuts of Farm Fresh Pork You Need to Know About

Blog

Pork: the other white meat.
But… should it really be compared to chicken?
How did we even get here?
And honestly—do I want that comparison?

Over five years ago, I bought my first whole hog from a local farm, and it completely flipped my idea of what pork should look and taste like.

Everything changed.
Suddenly pork chops weren’t pale and lifeless anymore. I discovered ham that wasn’t pre-cooked. I cooked fresh bacon for the very first time—and wow, what a difference. I had to reset my expectations, learn new techniques, and go back to the basics.

Here’s something most people don’t know: pasture-raised pork cooks faster than conventional pork.
Like, 15–20% faster.
So if you’re used to store-bought pork, you’ll want to keep a closer eye on it.

Was it an adjustment? Sure. Any new experience is. But it was absolutely worth it.

Because when hogs are raised outdoors—roaming, rooting, moving the way pigs are meant to move—their muscles develop in a way feedlot hogs simply can’t. The result? Darker meat, deeper flavor, and more natural moisture because they aren’t living under constant stress. It’s real food with real texture—not something soft and uniform like baby food.

And because our hogs grow in sunshine and fresh air, not under artificial lighting, their meat doesn’t have that pale, uniform look most people are used to.
But you’re not “most people.”
You’re here because you want something better—and you can taste the difference.

Cooking my way through a farm-fresh pork share has been such a fun experience, and I’m excited to share some of the best cuts to know about and how to make the most of them.

I’m excited to see how you add any of these farm-fresh cuts to your table.

Warmly,
