How to Make a Delicious Slow Cooker Au Jus Pot Roast

Blog

Try a unique and different recipe that you can use with an assortment of roasts. This is a savory, au jus-style pot roast. The tomato sauce doesn’t overwhelm, but provides a nice, sweet flavor and helps to tenderize the meat. Quick and easy.

You can use this recipe with a chuck roast, arm roast, cross rib roast or sirloin tip roast.

Make some homemade creamy mashed potatoes with yellow potatoes, cream cheese and lots of butter yummm—everything is better with butter—and serve with a side of roasted carrots or a favorite side dish to enjoy with this roast.

INGREDIENTS

  • 1 (2-3 pounds) Strandquist Family Farm Chuck, Arm, Cross Rib Roast or Sirloin Tip Roast

  • 3-4 tablespoons Worcestershire sauce, divided

  • 2 tablespoons Steak Seasoning

  • 1 tablespoon Steak Sauce

  • 2 tablespoons olive oil, butter or lard/tallow

  • 1 cube beef bouillon

  • 1 cup hot black coffee (I’m a coffee drinker so had some ready to go)

  • 1 (8 ounce) can tomato sauce

  • 1 (14 ounce) can dice tomatoes or 2 fresh tomatoes, optional

  • 1 teaspoon dried oregano, or to taste

DIRECTIONS

  • Step 1

Rub roast with 1 tablespoon Worcestershire sauce and sprinkle on all sides with steak seasoning and sauce.

  • Step 2

Heat olive oil, butter or tallow/lard in a large skillet over medium-high heat. Sear the roast in the hot oil until browned, about 1-2 minutes per side. Transfer roast to a slow cooker.

  • Step 3

Dissolve beef bouillon cube in the coffee and pour the mixture over the roast. Pour tomato sauce over meat and season with oregano; drizzle meat with 2 teaspoons Worcestershire sauce.

  • Step 4

Set cooker to low and cook until meat is tender, approximately 3 1/2 to 4 hours
