Thanksgiving week is here!
The cooking, prepping, hosting, traveling—or maybe all of the above—is about to begin. And listen… I’m just going to admit it:
I’ve been known to pull out the looser-fitting pants on Thanksgiving… just in case I want to indulge.
I KNOW. 😄
But as wonderful as the feast is, we all know eating like that indefinitely doesn’t feel great. So today, I wanted to make your post-holiday weekend a little easier with three simple, delicious leftover recipes—one for turkey, one for beef, and one for pork.
These are easy go-tos for the days after the big meal and perfect when everyone is somehow hungry again 24 hours later.
🦃 1. Creamy Turkey & Wild Rice Soup
Warm, comforting, and a lifesaver after a big holiday meal.
Ingredients:
-
Leftover turkey, shredded
-
1 cup wild rice, cooked
-
1 cup carrots, diced
-
1 cup celery, diced
-
1 small onion, chopped
-
4 cups chicken or turkey broth
-
1 cup heavy cream
-
Thyme, salt, and pepper
Instructions:
Sauté onion, carrots, and celery until softened. Add broth, turkey, rice, and seasonings. Simmer 10–15 minutes. Stir in cream, heat through, and serve.
🥩 2. 20-Minute Leftover Beef Chili
Perfect if you cooked a roast—or if you’re already craving something not turkey this weekend.
Ingredients:
-
2 cups leftover sff roast beef (or cooked ground beef)
-
1 can diced tomatoes
-
1 can beans (optional) — keto-friendly without; our kids don’t like beans anyway!
-
1 small onion, diced
-
1 tbsp chili powder
-
1 tsp garlic powder
-
½ tsp paprika
-
Salt & pepper
Instructions:
Sauté onion until soft. Add beef, tomatoes, beans, and seasonings. Simmer for 15 minutes. Serve with sour cream, cheese, or jalapeños.
🍖 3. Leftover Ham & Veggie Egg Bake
Light, protein-packed, and perfect for the morning after Thanksgiving—or a quick lunch.
Ingredients:
-
1–2 cups leftover sff ham, diced
-
8 sff eggs
-
1 cup spinach, chopped
-
1 cup bell peppers, diced
-
½ cup shredded cheese (optional)
-
Salt & pepper
Instructions:
Whisk eggs with salt and pepper. Stir in ham, spinach, peppers, and cheese. Pour into a greased baking dish and bake at 350°F for 20–25 minutes, or until set.
Delicious warm or cold—and refreshingly light after a big feast.
Save these recipes for the weekend—they’re the perfect “everyone’s hungry again” meals. (Because we all know they’re coming! 😄)
From our family to yours, Happy Thanksgiving.
May your table be full, your home cozy, and your leftovers plentiful.
