Pretty soon we’ll have an abundance of zucchini to harvest and enjoy around our dinner table.
But once it comes, it keeps coming and coming and coming.
And, of course, I’m always looking for ways to use it up so I don’t show up at my neighbor’s doorstep with an extra large zucchini that they probably didn’t want or need. I want to be on speaking terms ha.
I’ve dabbled in making zucchini bread, and some zucchini boats with ground beef yum, and if you’re looking for an even easier recipe for that zucchini that you may be harvesting yourself or picking up or you’re going to get as a gift — this one is it!
Not only is this simple and quick, your kids will love gobbling this up while they enjoy helping you make this easy veggie snack too.
Parmesan-Ranch Baked Zucchini Coins
Prep Time: 5 Mins.
Ingredients:
1/4 cup Parmesan Cheese Grated
2-3 medium Zucchinis, washed and unpeeled
1/3 cup Ranch Dressing
Instructions:
STEP 1. Preheat oven to 425 degrees F.
STEP 2. Cut zucchini into 1/2-inch slices and lay on a baking sheet.
STEP 3. Brush on Ranch Dressing (both sides).
STEP 4. Sprinkle with Parmesan cheese.
STEP 5. Bake for 15 minutes or until the tops are lightly browned.
That’s it. You’re ready to eat these parmesan-ranch baked coins as a quick snack or a side dish to your farm-fresh steak or a juicy burger.
Do you have a favorite zucchini recipe already? Let me know in the comments.
Best,
Tessa
Note: Depending on the size of the zucchinis and how much you want, use more or fewer zucchinis than what I suggest.
