Easy Beef Pita Pockets with Yogurt Herb Sauce

Blog

A fresh, flavorful spring recipe perfect for picnics, lunches, or light dinners.

When the weather warms up and fresh herbs start popping up in the garden, I naturally crave meals that are lighter, brighter, and easy to throw together. These Beef Pita Pockets with Yogurt Herb Sauce are exactly that — a perfect mix of savory, crisp, and creamy that satisfies without weighing you down.

The yogurt herb sauce is what pulls it all together. It’s creamy, tangy, and fresh — like a quick tzatziki but simpler. I love making extra and using it as a dip for veggies or spooning it over grilled chicken later in the week.

Whether you’re packing a picnic, prepping lunchboxes, or looking for a weeknight dinner with big flavor, this recipe is a keeper.

Instructions

  3. Drain excess fat if using ground beef, if needed. Set aside

  2. Whisk until smooth and creamy. Taste and adjust seasoning.

3. Prep the Fillings

  1. Dice cucumber, tomato, and onion.

  2. Toss gently with chopped mint and parsley.

4. Assemble the Pitas

  1. Warm pita bread slightly to make it more pliable.

  2. Spread a generous layer of yogurt sauce inside.

  3. Add a layer of cooked beef, then top with cucumber-tomato mixture.

  4. Add extra herbs or toppings as desired.

Tips

  • For easy packing, wrap each filled pita in parchment or foil—great for picnics or meal prep.

  • Try with whole wheat or mini pitas for a lighter bite.
