Ingredients
-
1 (28-ounce) can diced tomatoes
-
4 cups (1 quart) chicken broth
-
1 tablespoon olive oil
-
1 pound strandquist family farm (sff) ground pork
-
1 small yellow onion, diced
-
Salt
-
Black pepper
-
2 cups arborio, carnaroli, or vialone nano rice
-
1/2 cup dry white wine
-
1 cup finely grated Parmesan cheese, plus more for serving
-
1 tablespoon butter
-
1/2 cup loosely packed chopped fresh basil leaves or 1/4 cup dried basil leaves
Steps to Make
-
Warm the liquids
In a medium saucepan over low heat, combine the diced tomatoes (with their juices) and the broth. Keep warm at a gentle simmer. -
Brown the sausage
Heat the oil in a large, high-sided sauté pan or Dutch oven over medium heat until shimmering.
Add the sausage and cook, breaking it into small pieces, until fully cooked and lightly crisp at the edges, about 8–10 minutes.
Using a slotted spoon, transfer sausage to a paper towel-lined plate. Drain off excess fat, leaving about 1 tablespoon in the pan. -
Cook the aromatics
Add the onion to the pan along with a pinch of salt and black pepper.
Cook, stirring occasionally, until softened and fragrant, about 4 minutes. -
Toast the rice
Stir in the rice, making sure every grain is coated in the fat.
Cook, stirring constantly, until the edges of the rice turn translucent while the centers remain opaque, about 2 minutes. -
Deglaze with wine
Pour in the wine and cook, stirring constantly, until it has fully reduced and the pan is nearly dry, about 3 minutes. -
Build the risotto
Begin adding the warm tomato-broth mixture, ½ cup at a time, stirring constantly.
Allow the liquid to be almost completely absorbed before adding the next ladle. -
Cook until creamy
Continue adding liquid and stirring until the rice is tender with a slight bite (al dente) and the risotto has a creamy, thick consistency.
Start tasting around the 12-minute mark. Total cooking time will be about 20–30 minutes, and you may not use all of the liquid. -
Finish the risotto
Remove the pan from heat. Stir in the Parmesan and butter until fully melted and creamy.
Fold in the reserved sausage and basil. -
Season & serve
Taste and adjust seasoning with salt and pepper as needed.
Serve immediately, topped with additional grated Parmesan.
